NOT SO BOARING BILLY GOAT BURGER

Seasoned goat patty with red onion relish and house-smoked barbecue sauce on grilled Turkish pide, served with fries.

Ingredients (Serves 4)

800 g goat mince
2 tbsp dried oregano
2 tbsp dried basil
3 tbsp wholegrain mustard
salt and pepper
4 rashers wild boar bacon
oil
4 Turkish pide
red onion relish
barbecue sauce
2 tomatoes
200g Kapiti aged Cheddar
rocket leaves
fries 

Method

  1. Combine the mince, herbs, mustard and seasonings and mix well. Weigh out 200 g portions of the mix and shape into patties (not too fat for easier cooking). Sear the patties and bacon in a hot pan in a little oil or on a barbecue.
ASSEMBLY
 
Once your patties are cooked and you are ready to serve lightly grill the pide. Place a serving of the relish on one half and top with a patty, a slice of bacon and the barbecue sauce. Add some sliced tomatoes, Kapiti Cheddar and rocket and cover with another slice of the pide. Serve with a generous portion of fries and extra barbecue sauce on the side.
