Ingredients (Serves 4)

4 fillets of orange roughy salt and pepper
seasoned flour to dust gourmet potatoes
100g butter 4 rashers streaky bacon
100g capers 500g green beans
juice and zest of 2 lemons  
fresh parsley and coriander, chopped  


  1. Dust the fish fillets with the seasoned flour. Heat a pan with 1. a splash of oil.
  2. Place fillets into pan with a knob of butter and brown on each side (3-4 minutes).
  3. In a separate pan melt the remaining butter, capers, lemon juice and zest.
  4. To serve, lay fillets on a large plate. Spoon over lemon caper butter, and finish with chopped parsley and coriander.
  5. Serve with gourmet potatoes, and steamed green beans wrapped in streaky bacon.
